Maybe it's true what they say, "Absence makes the heart grow fonder". That could explain the daily requests we were getting for our favorite little French cookie, the palmier (pom.e.yay). They are so simple yet so delectable-- buttery, caramelly and crispy all at the same time.  Palmiers are created through a remarkable process of combining just flour, butter and sugar. The trick is the multiple folding of the puff pastry layers and baking them until the sugar caramelizes on the outside. Each summer we stop making palmiers (or send them on "vacation") because the heat and humidity effects their trademark crispiness. Now that fall is here, we have cool dry air outside and crisp palmiers inside. Stop in and ask for a taste today! They missed you!
