Charlie is our pastry manager here at the Bakehouse and he manages to keep everything moving along with enthusiasm for his work, passion for the product and support for his coworkers. Charlie has always had a love for food, maybe because his mom always made him bake his own birthday cake. Before working at the Bakehouse, Charlie attended the Culinary Institute of America and then worked in a few kitchens, including the Inn at Bay Harbor in Bay Harbor, Michigan and even a stint at Zingerman's Delicatessen. Years later he recalled the Zingerman's mission statement and really felt compelled to by it, so he applied for the position as pastry manager and the rest is history. Currently, Charlie is working on adding fresh, hand-dipped candy bars to our repetoire. He really knows his stuff when it comes to chocolates, but he'll be furthering his knowledge this Spring when he goes to Ecuador to learn from one of our chocolate suppliers.
Charlie's favorite Bakehouse pastries to eat are Hot Cocoa Cake right out of the oven and Zzang! candy bars.
Charlie's favorite pastries to make in our kitchen are pecan praline for our Pecan Blondies, candy bars, and Palmiers.
